Kombucha is a live fermented drink made from tea, sugar, and a culture of bacteria and yeast (SCOBY) from kombucha. Primary fermentation occurs over a two-week period allowing bacteria and yeast to feed on sugar and tea, converting it to organic acids, B vitamins, antioxidants, and a small amount of alcohol.

SCOBY is an acronym for Symbiotic Colony Of Bacteria and Yeast (Symbiotic Colony Of Bacteria And Yeast), which is used in the production of various beverages and foods.

The amount of caffeine present varies depending on the types of teas used and the amount of time steep. Regarding the shock you get from caffeine, L-Theanine, found in tea, balances caffeine to create calming energy compared to most energy drinks.
